I'd guess an afternoon struggle or two day chore. It's pretty straight-forward and obvious. You have to drop center bearing to get room enough to pull shaft off (either front or rear, doesn't matter) and probably need to drop exhaust and emergency brake cable before center bearing drops sufficiently. I drop rear motor/transmission mount for more clearance. Be Very Sure you Mark the Position when you separate front and rear parts to install new center bearing. It's balanced now, won't be if you put back together wrong. I've done this several times over the years lying on my back in my driveway. It would be far easier if you had a lift and could stand up while doing it. You're right-on wanting to do both disks and center bearing. Replacing just one disk is 85% of the work of doing it all. These guys: http://www.lostinseattle.com/LIS/autorepair/holmansbodyfender.html did a brilliant job repairing my 1973 yellow Superbeetle when it was broken into. The doors at the tops of the windows were bent (crowbars), both side windows were broken (unobtanium, except at salvage/junk yards), etc. The insurance company paid for that much. I paid an additional fee for him to sand out the rust in the sunroof and nose and the paint matched *perfectly* -- no way could you tell even on very close inspection that only part of the car had been repainted. The owner/manager is Don Holman, iirc. I'd tell you to tell him I sent you, but I doubt he would remember me. Otoh, that bug was *mint* other than the damage the pigfskers did to it, so he just might.
